"WHO MADE THE RULES?"


Born in the South of Italy,  I grew up surrounded by the Mediterranean sea, heart and soul.

After spending  a decade in London in places such as The Hospital Club, OXO Tower, The Cinnamon Club and HIX Soho and having worked along side some of the highest level bartenders, sommeliers and chefs, i decided to move to Spain in 2012 closer to the sun and sea.

Having being a former brand ambassador of Martins-Brands portfolio as  a new brands builder that introduced brand such as Fortaleza tequila, Michter's  whiskey range and Thomas Henry to the Spanish market.

Also co-founder of  the IBIZA COCKTAIL ROOM, a bartenders community with the aim of sharing knowledge , techniques and discovering new flavours and ingredients with the purpose to raise the level of both service and quality of drinks on the Balearic Island.

Passionate about training, sharing knowledge and introducing new ways of improving the bar scene as a whole at all the time.

Growing up in Athens where my first encounter  with hospitality and passion began with the memories of my mothers kitchen, where we used to spend any time of the day, every occasion and celebrations smelling, tasting and cooking.
It was like a family tradition for us to  host, serve and accommodate who ever we had as a guest to make sure they will remember our hospitality...

During my BA Business and Management studies I decided to work for some extra cash as you do when young and student and  fell instantly in love with the bar as soon as I entered my first trial shift. 

Shortly after I was fortunate enough to be  taken under the wing of DICK BRADSELL and opened an array of different ways of perceptions for the industry. 

Been fascinated with our taste senses, memory lane and cultural & traditional ways of every individual, that  i am constantly on the discovery for new and alternative ways to provide a unique experience to the guests.

Working closely the past years with chefs, I quickly adopted a strong philosophy for organisation, research and production and exploring the senses of taste, feel & perception...

A combination of 30 + years in the service industry, learning, working and managing an array of concepts from cocktail bars, to Michelin restaurants, clubs and hotel bars.

Mostly trained and worked in London, we have expanded our experience and knowledge abroad in different projects from Moscow, Paris, Beirut, Copenhagen and Ibiza.

We love to kick ideas and thoughts around, there is no difference between bartenders, floor and kitchen staff. We consider everyone can offer something as a team, we are all in it "together".
We believe in role playing, reinventing personal experiences and tailoring an educational & bespoke approach to fit our consultancy projects individually.

We emphasis on “think global, act local” market research and environmental friendly whereas working closely with our suppliers, producers and chefs and we try to maximize all the potentials of the ingredients we use diversely for the end production.
